Impromptu Field Trip

A fortnight ago, I decided to take the kids on an impromptu field trip to the Reptile Zoo.  They were delighted, especially as I kept our destination a secret up until we pulled into the parking area!  Amy had to be let in on the secret, as she was my navigator.

At one point, all of the kids got to handle two snakes, but I was feeling so dizzy with standing for so long I had to go sit down!  Abigail really liked the snake though, and talked about it for days afterwards.  We had a blast at the Reptile Zoo!  I hope you enjoy our pictures.  :)

Pregnancy Update ~ 17 Weeks

Now that I'm 17 (almost 18!) weeks into this pregnancy, and since several people have asked how I'm getting along, I thought I'd do a quick update here: 

Firstly, I am SO THANKFUL that God has allowed us another pregnancy, and for us to become parents again!!!  Praise Him for His goodness!!!

Physically, I am doing great; the nausea passed at around 12 weeks and I am slowly regaining some energy.  Though, I have noted that I don't have as much energy in this pregnancy, as I had at this stage in my last.  I can't really think why, as I am getting the same amount of sleep each night, eating the same way, and taking the exact same supplements.  Perhaps, it is just the obvious fact that I now have an extra child to care for, as opposed to then, and am also two years older! Ha!

In the last few weeks, I have begun to feel Baby's movements, which is such an exciting time!!!  I feel so blessed to be a woman and get to feel this precious, new life growing, wriggling and kicking around. ♥

For this pregnancy, we have employed an independent midwifery firm, so that I can finally have the homebirth, that we feel will be safest for both Baby and me.  This service wasn't available to me last pregnancy, but I am so thankful that it is now.  I have two midwives assigned to me (one whom I have already met) and they will pick up my care at 36 weeks.  Up until then, I am alternating between seeing our family GP and a lady OB at a local hospital. 

We have an ante-natal appointment coming up at the end of the month, and then just a couple of weeks later, are going for another ultrasound!  We are all so excited to find out what the gender of the Baby is!!!

Cheap and Easy Meal Idea ~ Mackerel Curry

Canned Mackerel Is A Favourite Snack For Daddy And The Little Kids
-Sometimes Even As A Breakfast Accompaniment!

Okay, if you are looking for a nutritious, *cheap* and easy meal to feed your hungry family, then this recipe's for you!  I came up with this recipe, one evening, when the kiddos were "starving" and I realised that I had no dinner plans - eeek!  Mackerel curry was born!  It is still considered a favourite meal and the kids have been known to shout in delight, when they know it is for dinner. :) 


Several cans of Mackerel - drained (one per family member)
Large Onion
Ready-mixed Curry Powder or Spices of your choice (coriander, cumin, cayenne, garlic...etc)
Black pepper and Sea-Salt
1-2 Cups of Frozen Peas
Handful of fresh veggies (optional)
2 Cans Coconut Milk (depending on your family size, you may need to use more or less)
Handful of fresh Coriander/Cilantro (optional)
Brown Rice

Just Spices - No Nasties


Drain your cans of mackerel, and set to one side. Heat a little oil (I use coconut, as it doesn't burn as easily as olive oil or butter) in a large pan, while you dice one large onion.

Put another pan of water on your stove to boil - this will be for the rice. 

Brown the onion and then add about two tablespoons of spice mixture to the pan and stir.  you can add more spices later if you wish.  Plop in your canned mackerel.  Next add your coconut milk and stir.  Once heated through, turn the heat down to the minimum.

Add your rice to the other pan, once the water is boiling.  Cook until "al-dente" *no soggy rice please*. :)

Check the seasoning and spice of your curry and adjust if needed.  At this point, I like to stir in a large handful of fresh coriander (called cilantro in the U.S).

Drain your cooked rice and serve out with a ladle full of curry served on top! You can also serve this meal with crispy poppadoms and a fruit chutney, on the side, if you'd like. :)
