The *BEST* Sugar-Free Muffins Ever!




These Muffins Are Seriously The *BEST*!


For the last two months or so, about once every week, I have been making a batch of these amazing, sugar-free muffins.  As a family, we have been trying to go sugar-free as much as is possible, and these muffins are helping to soften the blow! The original recipe can be found HERE.

I recently tried to make them with fresh chopped strawberries, but they did NOT work out, so I wouldn't suggest trying that option.  Usually, I make the unsweetened apple sauce option, but the banana one works just as well.

So there you have it!  These muffins are very quickly to make, economical and taste great.  If you don't believe me, I thought a few pictures of my own "muffins" enjoying them, might convince you! 


  • 2 ½ cups Rolled Oats (1.5 cups ground), 2 Tbsp reserved for muffin tops
  • 2-3 large Over-ripe Bananas (1 c. mashed) or 1 cup un-sweetened Applesauce
  • 2 Eggs (lightly beaten)
  • ⅓ cup Honey
  • ¾ cup Milk
  • 2 tsp Vanilla
  • 2 tsp Baking powder
  • ½ tsp Baking soda
  • ½ tsp Salt
  • 1 tsp Cinnamon
Instructions

  • Preheat oven to 180C/350F degrees. The original recipe states to toasts the oats before using them, but I just can't be bothered and my muffins still taste great.  So go ahead and toast if you want, and don't bother if you don't! :)
  • Place 1.5 cups of oats in a food processor (I use a mini baby-food type one) and blend/pulse until they reach a rough, flour like consistency.
  • Dump either applesauce OR *well-mashed* bananas into a bowl or stand mixer.
  • Add eggs, honey, milk and vanilla. Mix to combine.
  • Add all the dry ingredients to wet ingredients and mix until only just incorporated. Allow these to sit for 10 minutes to soak the oats.
  • Scoop into muffin tin, lined with muffin liners (makes 12-14 muffins).
  • Bake for about 20 -25 minutes, keeping a close eye on them at the end to prevent burning.
  • *Try* and allow them to cool before eating, else you'll have muffin stuck to your liner...of course you could always nibble it off if you *really* can't wait that long! ;)
